one hour before a 200m event were able to shave
a significant time off their usual performances.
Dr Jonathan Folland, who led the study, says that
it is not uncommon for top swimmers to take
sodium bicarbonate (another name for the substance)
before a competition to give them an edge. Indeed,
he showed that of nine swimmers tested, eight
recorded their fastest times after ingesting a
supplement of the common baking ingredient - sodium
bicarbonate.

Another small study by Dr Ronald Deitrick,of the
American College of Sports Medicine (ACSM), showed
that competitive runners also benefited. Dr Deitrick,
who presented his findings at the ACSM annual
conference, gave 800m runners either a placebo or
a sodium bicarbonate capsule, which they took with
water. Although a few of the runners had minor
gastrointestinal problems after swallowing the
capsules, a greater number benefited significantly.

Prior to the Beifing Olympics, an Australian sports scientist said
that the use of legal performance-enhancing substances
could become a major issue of the Beijing Olympics.
"Beijing will probably be remembered for the abuse
of legal aids," said Robin Parisotto on Australian
radio.

And Dr Deitrick believes that bicarbonate of soda
can significantly improve performance. "If you took
out the participants who experienced negative side-
effects... you'd see an average improvement in running
times of about 2.2 seconds," Dr Deitrick says. "For a
relatively short running distance, that's very
significant."

But how does something so seemingly innocuous have
such a dramatic effect? During prolonged or intense
exercise muscles produce large amounts of acidic
waste products, such as lactic acid, that lead to
soreness, stiffness and fatigue. Because sodium
bicarbonate naturally reduces acids, it acts as a
buffer against these performance-limiting by-products.

Current research suggests that it is particularly
helpful in speed-based events, including sprints,
football and other fast-moving games, and middle-
distance (up to 10km) running, swimming and cycling.

the acidity produced in the muscles during intense,
anaerobic exercise that produces lactic acid most

In Dr Folland's study, swimmers who took the sodium
bicarbonate knocked 1.5 seconds off their time for
200m, a difference that may seem insignificant to
recreational swimmers but which is substantial at
elite level.

"At the last Olympics, the top four swimmers in the
men's 200m freestyle were separated by just 1.4
seconds," Dr Folland says. "So, in theory, it could
be the difference between winning a medal and not."

Anyone can try it, he says, but only those who are
serious enough to monitor their times and progress
in sports such as running, swimming or cycling may
notice the few seconds advantage it might provide.
"The increments of improvement are relatively small
to the average person, although significant to
someone who competes," Dr Folland says.

103.  Clean Coffee and Tea Pots

Remove coffee and tea stains and eliminate bitter off-tastes by washing mugs and coffee makers in a solution of 1/4 cup pHour salts in 1 quart of warm water. For stubborn stains, try soaking overnight in the pHour salts solution and detergent or scrubbing with pHour salts on a clean damp sponge.

104.  Clean the Oven

Sprinkle pHour salts onto the bottom of the oven. Spray with water to dampen the baking soda. Let sit overnight. In the morning, scrub, scoop the pHour salts and grime out with a sponge, or vacuum, and rinse.

Remove dirt and grime (without unwanted scratch marks) from no wax and tile floors using 1/2 cup of pHour salts in a bucket of warm water–mop and rinse clean for a sparkling floor. Clean and deodorize your vinyl shower curtain by sprinkling pHour salts directly on a clean damp sponge or brush. Scrub the shower curtain and rinse clean. Hang it up to dry.

108.  Boost Your Liquid Laundry Detergent

Give your laundry a boost by adding ½ cup of pHour salts to your laundry to make liquid detergent work harder. A better balance of pH in the wash gets clothes cleaner, fresher, and brighter.

How Acidic Are You?


You can check your pH levels at home with paper pH strips, available at many pharmacies, or with a battery-operated pH electron meter, available from health catalogues or on our website HERE.

The strips, which are relatively inexpensive and should be easy to find, test the pH of your saliva or urine. The pH of saliva is much more variable, so you are better off testing your urine, which gives you a direct indicator of your tissue pH. Urine pH changes too, in response to what you eat, so first thing in the morning, after you've fasted overnight, is the ideal time to test. The morning urine pH will reflect your lifestyle and dietary choices over the last 24 hours. Ideally, it will be mildly alkaline, pH at 7.2 or higher.

The strips change color to indicate acid or base, and are lighter or darker depending on the intensity of the reading. They come with a color chart to help you translate the color into a number.

If you also want to check your saliva, which ideally will also be above 7.2, test it before eating anything in the morning, and then a few times during the day. If you find that your results are below 7.0, you can correct it immediately by eating a bit of particularly alkaline food, like cucumber, broccoli, asparagus or avocado, or taking 3 teaspoons of Young pHorever pHlavor mineral salts in 4-6 ounces of water. Experiment a little and you will quickly get a feel for what successfully corrects your tests results.

Special meters can also be used to test saliva or urine, and the same recommendations apply: It is best to test your urine, and do it first thing in the morning. These meters are quite accurate and give you your pH with a number--no color charts to mess with. But they can be hard to find, and expensive, running into the hundreds of dollars.

So whether you use a meter, or pH strips, test yourself to see where you are right now, and then retest daily to keep tabs on your progress. You can also see for yourself the effect of meals on pH, by regularly testing with a meter throughout the day. Though the results are not definitive, you will at the very least be able to see trends.

Test yourself after the basic meals like the ones described in our pH Miracle books and Shelley's Back to the House of Health books, and compare the result to those you got from your original diet. Any time you have low pH readings, especially after eating, you know that you are deficient in alkaline reserves. Your body does not have enough of the minerals necessary to process food properly, and cannot adequately respond to the physiological crisis of acidic food or drink.

Your doctor can also do a blood pH test for you. As mentioned in previous emails, the ideal blood pH is 7.365. The American medical establishment accepts 7.4, but that is too alkaline, and actually indicates tissue acidification. It indicates that the body is collecting and storing alkaline minerals to tame excess acidity. If it isn't fending off acidity, the body has no need to become so overly alkaline.

Daily pH testing is a key health check. As long as you are keeping it at 7.2 or better, then you can rest assured your blood and tissues are also healthy. (People coping with serious health challenges may need to increase the pH of the urine or other bodily fluids in order to curb acidity. I recommend that the pH during any serious challenge to be in excess of 8.5)

Monitor your pH according to these guidelines every day for at least 12 weeks, or until you establish a pH balance at 7.2 (with the help of the pH Miracle program outlined in Chapter 11 of the pH Miracle for Weight Loss). Once your are balanced at 7.2 or higher, you can reduce the number of tests to once a day or 2-3 times a week, just to keep an eye on things. Use a notebook to record all your pH results.

1. Upon waking, before you eat or drink or brush your teeth or smoke or put anything at all into your mouth, test your saliva with pH paper. Just wet the end of a test strip with your tongue. Note the color change and write down the corresponding pH number. The optimal result is 7.2.

2. Next, test your first urine of the morning. You just need a couple drops on the end of a test paper. Note the color change and write down the corresponding pH number. The optimal result is 7.2 or more.

3. Test your second morning urine before eating any food. Your result may differ from the first check, because with the first urine you cleared the acid load from the previous day. Again, you're looking for 7.2 or higher.

4. Eat breakfast -- avocado soup, vegetable soup, Healing Soup, or fresh almond milk or green drink. Wait five minutes and then check your urine and saliva again. After that good alkaline meal, your pH numbers should go up from the previous results. You're looking to be between 7.2 and 8.4.

5. Check your urine and saliva pH again between breakfast and lunch, and again between lunch and dinner. You're always looking to stay between 7.2 and 8.4 right after a meal, and at just about 7.2 a couple of hours after a meal.

You can run a simple pH test any time of the day after eating a few almonds. In a health person with adequate alkaline reserves, saliva pH will go up almost immediately to 8.4.

Monitoring your pH puts the responsibility of caring for your health back into your hands. It also lets you track your own results as you make positive changes in your lifestyle and diet, giving you immediate feedback about how you eat, drink and live affects your body and your health—and ultimately, the quality and quantity of your life.

Live Blood Analysis

If your urine or saliva (or blood) are acidic, it's a safe bet that you have tissue acidosis and possible microform overgrowth.

The simple fact is, most people do.

Live blood analysis more directly detect over-acidity and overgrowth. In a standard lab evaluation performed by hospitals and clinics, drops of blood are basically dried onto a slide to be examined under a familiar bright-field microscope, where acidic patterns in the blood and many of these negative microforms cannot be seen. Live blood analysis, by contrast, examines unaltered live blood, under special dark-field, phase-contrast compound microscopes. The high-powered compound microscope can magnify objects up to twenty-eight thousand times, so you can clearly view acid crystals, bacteria, yeast, and mold in exact detail in the blood. You can also see red and white blood cells, crystallized microforms, mycotoxins, cholesterol, metals, blood clots, undigested fats, and many other things--all in one drop of live blood! Bottom line: though it can also provide a lot more information, live blood analysis gives you a plain view of how crowded your blood is with acid crystals and undesirable microforms.

When I look at live blood, I also look at the space between the cells, where the extracellular fluid, or plasma, is. I call this the negative space, or context. The blood cells, and the blood overall, is only as healthy as this plasma in which they are bathed.

The blood never lies. What you see when you look at it this way is a direct reflection of your health, and what your are eating, drinking, and thinking. In short, it shows how you are living.

I have viewed the blood of thousands of people around the world—over 500,000 blood samples in over 72 countries—and through my work I can tell you: there are only two types of blood: healthy, and unhealthy!

Whenever I analyze someone's blood, I always ask them the same questions. What are you eating? What are you drinking? What are you thinking? What are you feeling? The people whose blood looks the best -- the people who live the longest -- are eating green foods, breathing clean air, drinking clean water, finding ways to manage stress, working outside, exercising daily and getting lots of sunshine. And I can see the effects of all that in one drop of blood, no question.

Live blood analysis requires some fairly expensive technical equipment, and well-trained and experienced practitioners to interpret what is seen. We believe every hospital, clinic, doctors office, medical lab, and nutritional center should have a properly trained live blood microscopist on staff. Dry Blood Analysis

After years of researching German techniques in dry blood analysis, I've developed a test called the Mycotoxic/Oxidative Stress Test (M/OST), which involves a small amount of blood allowed to dry and clot on a microscope slide. (Contact the pH Miracle Living Center for a referral.) Under the microscope, blood from healthy people forms a standard pattern--a dense mat of red areas interconnected by dark, irregular lines, called fibrin. The blood of people under mycotoxic/oxidative stress--meaning excess acidity and microform overload and the resulting harmful wastes--has a variety of characteristic patterns that deviate from that norm. One common (and visually striking) abnormality is the presence of "clear" or white areas interrupting the standard pattern. The extent and shape of the clear areas reflect the symptoms that are likely to arise as a result of excess acidity, overgrowth and cellular degeneration. That is, the pattern the blood reveals not only the presence of microform overgrowth, excess acidity and cellular degeneration but also the particular ways that overgrowth is affecting the individual. Certain patterns match certain symptoms, such as diabetes, arthritis, atherosclerosis, and even a cancerous condition.

In the end, however, getting all the details about your exact situation isn't absolutely necessary (though witnessing a live and dry blood analysis may be motivating like nothing else!).

Anyone on the standard American diet is, to a greater or lesser degree, imbalanced—acidic. If you have any symptoms, you can be sure you are imbalanced and over-acid. On the other hand, if you follow the program outlined in our pH Miracle books, doing what you know is right for your body, you can rely on your body to handle the complex details of self-repair. Your results—how you look and feel—will speak for themselves. Freed from acid overload, you'll be symptom-free, full of energy, and mentally wide awake. The Seven Most Alkaline Fruit and Vegetables for Preventing and Reversing Dis-ease

1. SPINACH -All leafy greens should be eaten in abundance but spinach is one of my favorites because it’s easy to buy, easy to use in recipes and salads and is delicious. Baby spinach or fully grown spinach are nutritional powerhouses and are incredibly alkaline. As with all green foods, spinach is rich in chlorophyll (see more about the health benefits of chlorophyll here), a potent alkalizer and red blood cell builder. It is also super high in vitamin K, vitamin A, manganese, folate, magnesium, iron, vitamin c, vitamin b2, calcium, potassium, vitamin e, dietary fiber…I doubt there is a more all round healthy food on earth and I highly encourage you to eat spinach throughout the day, every day.  Add spinach to your favorite green juice or soup.

2. KALE -Kale is another leafy green beauty that is widely known for its cancer-fighting, cholesterol-Lowering, antioxidant-rich, and detoxifying goodness. Less popular than spinach, but only because it has a history of being cooked poorly (like cabbage) – when done right it is absolutely delicious. If you eat kale 2-3 times per week you will decrease dietary and metabolic acids. Like spinach it is massively high in vitamin K, vitamin A and vitamin C and being leafy green it also has a huge chlorophyll content for building and improving red blood cell hemoglobin and hematocrit. The reason it is so powerful against acids that cause cancer is that kale contains at least four anti-acid or acid-buffering Glucosinolates. Glucosinolates are converted by the body into alkalizing acid-buffering compounds that protects the body cells from metabolic and dietary acids that are the cause of ALL sickness and disease. Also, kale is quite amazing for lowering cholesterol because it will ower metabolic and dietary acids that causes the release of cholesterol.  It should be noted that steamed kale is more effective for lowering metabolic and dietary acids and thus cholesterol lowering than raw.

3. CUCUMBER - The beauty of cucumber is it’s water content – 95%. That is phenomenal and you won’t find that in any other fruit. It’s the grand daddy of alkaline water-content. This of course makes it an incredibly hydrating food to consume, that ALSO contains superb amounts of antioxidants, including the super-important lignans. These highly beneficial polyphenols have more commonly been associated with the cruciferous vegetables, but their content in other veggies such as cucumbers is gaining more and more attention. Cucumbers contain a right load of lariciresinol, pinoresinol, and secoisolariciresinol , three lignans that have a huge and very strong history of research in connection with reduced risk of cardiovascular disease as well as several cancerous types, including breast, uterine, ovarian, and prostate cancerous conditions. The best thing about cucumber is that they provide the base for practically every alkaline soup, smoothie and juice – giving you a very alkaline, very nutritious base that also tastes great. In terms of the actual nutrient RDA per serving, cucumbers contain fair amounts of vitamins K and C, and slightly less of vitamin A and the B vitamins. Cucumbers also contain the following alkaline minerals: calcium, iron, phosphorus, potassium, magnesium, selenium, copper, manganese, iron and zinc.

4. BROCCOLI - Broccoli is just a must. If you are serious about living with health, energy and vitality you simply have to eat broccoli, if not on a daily basis, then at least 4 times per week. Broccoli has been proven over and over and over again to be incredibly powerful in inhibiting the acids that cause cancerous conditions.  Broccoli supports the digestive system, the cardiovascular system, the detoxification processes in the body and also supporting the skin, metabolism, immune system, being a wonderful anti-Inflammatory and providing ample acid chelating antioxidants. Eaten steamed or raw its a hugely alkaline and a hugely nutritious food. Please, please, please eat lots and lots of it. Put it in salads, juices, smoothies, soups…steam it with other green veggies – you can even roast.

5. AVOCADO -I eat a LOT of avocado because we grow them here at the Rancho del Sol. Not a salad, smoothie or soup goes by without me adding at least one avocado. I probably eat at least seven to ten avocados per week. Now, I know a lot of people give avocado a bad rap because it is a high-fat food (85% of it’s calories come from fats) – but this is totally good fat. These are good fats that will not make you gain weight. If anything, due to the high content of oleic acid (making it an Omega 9 fat and very similar to olive oil), it can lower total cholesterol level and raise levels of high-density lipoproteins (HDLs) while lowering low-density lipoproteins (LDLs), also known as the cholesterol that chelates metabolic and/or metabolic acid. Oleic fat also slows the development of heart disease, and promotes the production of acid chelating antioxidants. These beneficial omega oils also help speed the metabolism, actually leading to weight loss rather than gain. So now we’re over the fat issue, avocado also contains a wide range of other nutrients that have serious anti-inflammatory, heart health, cardiovascular health, anti-cancer, and will lower naturally blood sugar acid. Containing key antioxidants such as alpha-carotene, beta-carotene, lutein, selenium and more – it is a powerful, alkaline, nutrient-dense superfood.  The most powerful anti-acid is the antioxidant luctein which has been shown to prevent and reverse prostate cancer.

6. CELERY - Celery, like cucumber is a favorite because it’s alkaline AND really high water content, so is used very frequently as a base in juices and soups. One of celery’s big benefits is it’s vitamin C level, which has the well known benefits – but two of it’s lesser known nutrients are phthalides which have been shown to Lower cholesterol and coumarins which have been shown to inhibit several cancerous conditions. The beauty of vitamin C rich foods are that they help with the most common and most challenging health concerns – they support the immune system, inflammation (so helps with arthritis, osteoporosis, asthma etc), and vitamin C also helps significantly with cardiovascular health. If you are on a weight loss journey, you’ll also be happy to hear that this alkaline staple contains plenty of potassium and sodium and so is a diuretic – meaning it helps rid the body of excess acidic fluids.  Because celery is a great source of sodium, this vegetable helps to maintain the alkaline design of the body.  The high sodium levels in celery helps to transport energy ions in the form of electrons and is fundamental in the production of sodium bicarbonate.

7. CAPSICUM / BELL PEPPER / PEPPER - The antioxidant superpower, bell pepper is one of my all-time-favourites because it is crunchy and refreshingly delicious. You can use it in almost any meal raw, steamed or lightly roasted and it is always a winner. Impressively beneficial to our health cartenoids are highly researched and get a lot of attention in the health field and bell peppers contain over 30 different members of the carotenoid nutrient family. The only other food that is close to this is the tomato. Bell peppers have shown up in research relating to decreasing the risk of cardiovascular disease, type II diabetes, macular degeneration, cancer, inflammation and more. Alongside these lesser known or more complex-named antioxidants, bell pepper is one of, if not the best food source of the more common antioxidants: vitamin C, vitamin A and vitamin E. In fact, bell peppers contain twice as much vitamin C as oranges without all the acidic sugar. Cancro e Acidità: combattere l'acidità per vincere il tumore
Da vari anni la vicenda del dottor Tullio Simoncini è balzata agli onori della gloria mediatica e molte persone la ricorderanno senz’altro. Simoncini è il medico di Roma radiato dall’Ordine parecchio tempo fa con varie accuse di malasanità conseguenti il suo uso terapeutico del bicarbonato di sodio per curare alcune forme di tumore.
Secondo gli studi e la lunga pratica clinica del dottor Simoncini, infatti, ci sarebbe una correlazione tra il terreno acido dell’organismo e l’instaurazione di colonie di funghi che porterebbe poi allo sviluppo del cancro, cancro che non è altro quindi che un’infezione fungina degenerata e inarrestabile. Ripristinando il corretto equilibrio basico e intervenendo con l’apporto di sostanze antiacide, quali appunto il bicarbonato, si ottiene un rallentamento del progredire canceroso e, se preso in tempo, anche la guarigione. 
Su questa dinamica terapeutica alcuni mass media abituati a ridicolizzare i processi troppo semplici che non possono essere ricondotti all’alveo della pura scienza ipertecnologica si sono scatenati schernendo l’idea stessa di partenza e coloro che se ne sono fatti portavoce, senza nemmeno fare concessioni, come invece ha auspicato notoriamente A. Einstein, all’importanza nella scienza di saper sempre mettere in discussione ogni parvente verità scientifica.
Terapia antiacida in funzione antitumorale: le recenti ricerche “ufficiali”
Qualche anno dopo la drammatica uscita dalla scena del dottor Simoncini ecco che apprendiamo da fonti autorevoli ed esenti da ogni “sospetto” che la terapia antiacida in funzione antitumorale è allo studio in vari centri di ricerca nel mondo e che Cancer Research e altre riviste scientifiche internazionali iniziano a parlarne e a considerare i possibili sviluppi di farmaci a base di molecole che ripristinano il corretto equilibrio acido-basico dell’organismo, e in particolare della zona colpita dal tumore, inibendo la sua crescita e arrestandola.
Il fiore della nuova terapia è sbocciato alla consapevolezza generale in occasione del primo simposio dell’International society for proton dynamics in cancer (Ispdc), tenutosi a Roma il 27 settembre 2010.
Gli illustratori di questa “scoperta” sono stati gli scienziati dell’Istituto superiore di sanità che stanno lavorando all’ipotesi di utilizzare gli antiacidi (bicarbonato compreso), e in particolare gli inibitori della pompa protonica solitamente adoperati per le ulcere gastriche, in funzione antitumorale al posto dei chemioterapici.
In una intervista rilasciata da Stefano Fais a Repubblica, il presidente Ispdc e membro del dipartimento del farmaco dell’Iss, afferma che «l’acidità è un meccanismo che il cancro usa per isolarsi da tutto il resto, farmaci compresi. Ma le cellule tumorali, per difendersi a loro volta da questo ambiente acido, fanno iperfunzionare le pompe protoniche che pompano protoni H+. Se si bloccano queste pompe, la cellula tumorale rimane disarmata di fronte all’acidità, e finisce per morire autodigerendosi». Ossia la “nuova” idea base di partenza è che i tumori sono acidi e che da lì occorre iniziare.

Il quarantesimo numero lo festeggiamo con la messa on line del nuovissimo sito internet, rinnovato nella grafica, ma soprattutto nelle funzionalità e nei servizi destinati ai lettori e agli abbonati.Scienza e Conoscenza 40 è dedicato al tema del ph ovvero alla questionedell'acidità dell'organismo come causa della genesi di molte malattie nel corpo umano: un paradigma interessante e sempre più condiviso all'interno del mondo scientifico che pare rispondere a molti quesiti biologici sinora rimasti irrisolti. In questo numero trovate una presentazione dell'approccio dietico acido-base, le nuove ricerche relative all'efficacia del bicarbonato di sodio e di altri composti con proprietà anti-acide nella cura e regressione delle malattie tumorali, la rubrica di medicina dell'informazione curata dal dottor Baldari centrata sulle intolleranze alimentari e la loro risoluzione.
